Got Free BBQ Sauce? Make BBQ Chicken Pizza!

In honor of all that free (or practically free) Kraft BBQ Sauce on sale at Albertson's through tomorrow, I give you: BBQ Chicken Pizza. This is one of my absolute favorite recipes. I hope your family comes to love it as much as mine does.

BBQ Chicken Pizza

Dough
1 3/8 cups water (warm)
2 1/2 teaspoons yeast
3 Tablespoons olive oil
1/4 cup sugar
1 1/2 teaspoon salt
4 cups flour

Dissolve yeast in water. Add all other ingredients and mix in a mixer. Pour into a greased bowl and cover with greased plastic wrap. Allow to rise until double in size. (If you have a bread maker, just place all ingredients in the machine and select the dough setting.)

Divide the dough in half and roll out on greased baking pans into 2 pizzas.

Toppings
1 large chicken breast, cubed
2 garlic cloves, minced
1-2 green peppers, sliced
1 cup sliced fresh mushrooms
BBQ sauce
1 pound mozzarella cheese, shredded
Green Onions, to garnish

Brown chicken in olive oil with garlic. Season with salt to taste. Add green peppers and mushrooms and cook until green peppers begin to get tender.

Divide the BBQ sauce between the two pizzas. Top with cheese and chicken mixture.

Cook at 375 degrees for 25-30 minutes or until golden brown and the cheese is bubbly.


Cost Breakdown
Dough $1 (Since all of the ingredients for the dough come from my pantry and it is hard to break them down I am just estimating $1 for all the ingredients)

Chicken $1 (Chicken is on sale for $1.99/lb at Albertson's through Tuesday and 1 breast is aproximately 1/2 lb)
Garlic $.05 (from my fridge- this is a must have item in my kitchen)
Green Pepper $1 (these are available everywhere for $1 or less a pepper. Soon I hope to have some in my garden!)
Mushrooms $0.50 (I buy loose mushrooms in bulk since I only need a handful. This is cheaper than buying the pre-packaged mushrooms.)
BBQ Sauce FREE (As part of the Kraft promotion and using your doublers from yesterday's paper these are free!)
Cheese $1.80 (from my freezer from a promo a couple of months back, but Albertson's and Fred Meyer both have pretty good prices on cheese this week.)
Green Onions FREE (from my garden)

TOTAL FOR 2 PIZZAS: $4.35!

I often make one pizza with BBQ sauce for me and one with pepperoni for the kids. Or, try freezing one on a disposable aluminum pizza tray before baking so you have a yummy dinner for a couple of weeks down the road.
