Honey Dijon Garlic Chicken
1 lb chicken breast
20 cloves garlic, peeled
3/4 cup chicken broth
1/2 cup Fat Free Honey Dijon Kraft Salad Dressing (or use any of the varieties you have. Caesar would be good or you could add an Asian flair with the toasted sesame.)
1/4 cup grated parmesan cheese
Heat 1 T Olive Oil in a large skillet. Att the chicken and garlic and cookuntil browned on both sides. Stir in broth and dressing and simmer until chicken is cooked through (about 10 min). Sprinkle with Parmesan Cheese. (I know there is A LOT of garlic in this, but the cloves get very soft and sweet)
Roasted Asparagus
Drizzle 1 bunch asparagus with 1 T Olive Oil and toss with 2-3 cloves minced garlic. Spread in a single layer on a cookie sheet and roast in a 400 degree oven for 20 min.
Fresh Salad
Top fresh lettuce with croutons, craisins and freshly sliced green onions. Serve with your favorite dressing.

chicken $1.88 (or even cheaper for those of you who got it from Cash & Carry)garlic $.25
Broth $.39 (using Albertson's doublers this week)
Salad Dressing $.02 (a whole bottle is $.08 at WalMart and I only used 1/4)
Parmesan Cheese ($.10- I only used a sprinkle!)
Asparagus $.99 (From Winco last week)
Salad $.33 (Bag from Winco for $.98 and I used 1/3)
Croutons $.25 (Bag at Winco was $1.50 and I used only a few)
Craisins $.25 (I paid $1.50 for the bag at an Albertson's promo a while back, I only used a few)
Green Onions $0 (from my garden!)
TOTAL: $4.46!

Yeah--this would make a great weekly post, "Monday might meal deal" or something like that. It would be great to find recipes using things that are on sale that week. I know there are whole blogs devoted to that sort of stuff, so it can't be that hard, right! I think I remember reading one blog that was titled $5 dinners or something like that.
